    • 1/2 cup water
    • 1/4 cup light corn syrup
    • 1/2 cup (1 stick) unsalted butter, cut into pieces
    • 1/2 cup whipping cream
    • 2 tablespoons crème fraîche or sour cream
    • 1 cup walnuts, toasted, finely chopped

    Chocolate glaze
    • 1 cup heavy whipping cream
    • 7 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
