Ingredients

  • 1 3/4 cups unbleached all purpose flour
  • 1/3 cup sugar
  • 1 tablespoon grated lemon peel
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 12 tablespoons (1 1/2 sticks) chilled unsalted butter, cut into small pieces
  • 2 large eggs, lightly beaten

    • 3 tablespoons ground amaretti cookies* (from about 3 cookies)
    • 1 3/4 cups apricot or fig jam

    • 1 large egg, beaten to blend
