Ingredients

  • 1 3/4 cups warm water (105° -115° F.)
  • 2 1/2 teaspoons (a 1/4-ounce package) active dry yeast
  • 2 tablespoons fennel seeds
  • 5 1/2 cups organic unbleached bread flour* or unbleached all-purpose flour plus additional if necessary
  • 2 teaspoons coarse salt
  • 1/2 teaspoon freshly ground black pepper, or to taste
  • 6 tablespoons extra-virgin olive oil
  • 2 tablespoons Pernod or other anise-flavored liqueur

    • 1 large egg
    • 2 tablespoons water
