Apricot Berry Trifle

Ingredients

  • 2 1/2 cups milk
  • 1 vanilla bean, split lengthwise
  • 6 large egg yolks
  • 2/3 cup sugar
  • 3 tablespoons cornstarch
  • 3 tablespoons apricot brandy, or to taste
  • 1/2 cup crème fraîche
  • 1/2 cup well-chilled heavy cream
  • 6 large fresh apricots, cut into 1/2-inch pieces (about 2 cups)

  • For the red berry mixture
    • 4 cups strawberries, hulled
    • 2 cups, raspberries, picked over
    • 2 tablespoons sugar, or to taste
    • 1 to 2 tablespoons fresh lemon juice, or to taste
    • 1 to 2 tablespoons framboise or Chambord, or to taste

    For the blackberry mixture
    • 2 1/2 cups blackberries, picked over
    • 1 tablespoon sugar
    • 1 tablespoon fresh lemon juice
    • 1 tablespoon framboise or Chambord
