Almond Ice Cream Terrine with Chocolate Truffles and Raspberry Sauce

Ingredients

  • 1/2 cup whipping cream

  • 4 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped
  • 1 1/2 tablespoons amaretto or other almond liqueur

  • For ice cream
    • 2 1/2 cups whipping cream
    • 1 1/4 cups whole milk
    • 3/4 cup plus 2 tablespoons sugar
    • 1 cup whole almonds, toasted, coarsely chopped

    • 7 large egg yolks
    • 1/2 teaspoon almond extract

    For sauce
    • 1 12-ounce package frozen unsweetened raspberries, thawed
    • 6 tablespoons sugar
    • 1/4 cup amaretto or other almond liqueur

    • Fresh raspberries
