Ingredients

Shades of Autumn Pie

  • Reduced-Butter Pie Pastry, (recipe follows)
  • 6 cups thinly sliced peeled apples, (2 1/4 pounds), such as Northern Spy, Rhode Island Greening and/or Gravenstein
  • 1 large firm pear, peeled and thinly sliced
  • 1/3 cup plus 2 tablespoons sugar
  • 2 teaspoons freshly grated lemon zest
  • 1 tablespoon lemon juice
  • 1 1/2 tablespoons cornstarch
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg

Pecan crumb topping

  • 3/4 cup whole-wheat flour, or all-purpose flour
  • 1/2 cup packed light brown sugar
  • 1/2 cup pecan halves
  • 1/4 teaspoon ground cinnamon
  • 3 tablespoons cold unsalted butter, cut into small pieces
  • 1 1/2 tablespoons milk
