Ingredients

  • FOR THE TURKEY:
  • 1 1/2 gallons very cold water
  • 3/4 cup Kosher Salt
  • 3/4 cup brown sugar
  • 1 turkey, about 10 pounds
  • 1/2 cup corn syrup
  • 1/2 cup Steens Cane syrup
  • 1/2 cup melted butter
  • 1 tablespoon Creole seasoning
  • 1 cup chopped trinity
  • 1 clove garlic, minced
  • Chicken stock
  • Reserved turkey neck, giblets
  • 1/4 cup plus 1 tablespoon flour
  • 4 cups chicken stock
  • 1 teaspoon salt
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon hot sauce
  • FOR THE OYSTER DRESSING:
  • 3 tablespoons olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped celery
  • 2 tablespoons chopped garlic
  • 3 cups cubed day-old bread
  • 1 1/2 cups oysters, shucked and in their liquor
  • 1 cup chicken broth
  • 1/4 cup chopped green onions
  • 2 tablespoons chopped parsley
  • 1 tablespoon Creole seasoning
  • 1/2 teaspoon hot pepper sauce
  • Salt and freshly ground black pepper
