Shepherd's Pie

Ingredients

  • 5 tablespoons unsalted butter
  • 3 large Idaho potatoes (about 2 pounds), peeled and cut into 1-inch cubes
  • 2 teaspoons salt
  • 1/2 cup milk
  • 1/4 cup heavy cream
  • 1/4 teaspoon plus 1/8 teaspoon freshly ground black pepper
  • 1 tablespoon vegetable oil
  • 1 cup chopped yellow onion
  • 1 teaspoon minced garlic
  • 1 1/2 pounds ground lamb or beef
  • 3/4 teaspoon Emeril's Italian Essence or other dry Italian seasoning
  • 1/4 teaspoon dried thyme leaves
  • 1/4 teaspoon ground cinnamon
  • Pinch ground cloves
  • 1 tablespoon all-purpose flour
  • 1 1/4 cups reduced-sodium beef broth
  • 3/4 cup diced carrots
  • 1/2 cup green peas, fresh or frozen (if frozen, do not thaw)
  • 2 teaspoons tomato paste
  • 1/2 cup grated sharp Cheddar cheese
