Ingredients


1 cup cornmeal (fine or medium grind)

1 1/2 cups hot water, or more as needed

1 pinch salt

2 tablespoons olive oil, or more as needed

8 oz ground beef, pork or lamb

1 pinch Black pepper, freshly ground

1 each Onion, chopped

1 tablespoon Garlic, minced

1 tablespoon chili powder

8 each roma tomatoes (plum), chopped (canned are fine; drain juices)

3 cups corn kernels (frozen are fine)

1/2 teaspoon Baking powder

1/4 cup Chopped fresh cilantro, for garnish
