olive oil medium leek, white and pale green parts only, thinly sliced finely chopped ginger root cloves garlic, chopped large carrots, sliced large sweet potato, peeled and cut in chunks curry powder PC Blue Menu Chicken Broth fresh orange juice salt
2 tbsp (25 mL) 1 2 tbsp (25 mL) 3 4 1 1/2 tsp (2 mL) 1 pkg (900 mL) 1/2 cup (125 mL) 1/2 tsp (2 mL)

Description

A Lovely First Course Soup. Use Whatever Curry Powder You Have On Hand; You May Want To Decrease It Slightly If You Use Hot Curry Powder. Serve Dolloped With Greek Yogurt And Sprinkled With Chopped Chives, If Desired.
