1 bunch coriander leaves, chopped
Pinch of baking soda
60 mL water
Salt, to taste
Sunflower oil for deep frying
For the tempering
2 tablespoons ghee
Pinch of asafoetida powder
2 whole red chillies
3 garlic cloves, sliced vertically
1 tablespoon black mustard seeds
1 green chilli de-seeded and split lengthways
1 tablespoon ground coriander
