  • 3 medium Sweet Potato, (about 2 1/2 lbs total) peeled and cut into 1-inch cubes
  • 4 cups Vegetable Stock, or chicken stock **use GF as necessary
  • 1 medium Jalapeno Pepper, seeded and finely chopped
  • 1 cup Corn Kernels, fresh or frozen
  • 2 tablespoons Molasses
  • 12 tablespoon Kosher Salt
  • 14 teaspoon Cayenne Pepper
  • 14 teaspoon Black Pepper
  • pinch Cinnamon
  • Scallion, finely chopped, green parts only (or minced parsley)
