Chick Pea And Artichoke Heart Stew

Ingredients

  • 4 cups Vegetable Stock, or water
  • 2 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive Oil
  • 1 teaspoon Ground Turmeric
  • 1 teaspoon Sweet Paprika
  • 4 medium Red Potato, cut into 1/2 inch cubes (about 4 cups)
  • 1 sprig Fresh Rosemary, 1 teaspoon ground
  • 5 leaves Fresh Sage, minced (1/2 teaspoon dried)
  • 12 cup Frozen Pureed Winter Squash, we have found that a 4.5 ounce jar of pureed squash baby food works very well in this recipe and is just the right size
  • 3 cups Canned Garbanzos (Chickpeas), 2 cans, drained
  • 1 Canned Artichoke Hearts
  • Grated Parmesan Cheese, optional
  • lemon wedges, optional
