- 5 teaspoons Garlic, minced
- 1 pound Ground Turkey, lean
- 2 Carrots, peeled and grated
- 7 Fresh Button Mushrooms, Shitake, or your choice, thinly sliced
- 1 cup Red Cabbage, shredded
- 6 Scallions, chopped
- 1⁄2 cup Summer Squash, (or Yellow Zucchini), diced
- 4 Egg Whites
- 1⁄2 cup Peanuts, chopped (optional)
- 1 head Iceberg Lettuce, or Romaine Lettuce, large head
- 1⁄2 cup Fresh Cilantro, chopped
