  • 1 Onion, chopped
  • 2 Carrots, peeled and thinly sliced
  • 1 Red Bell Pepper, seeded and chopped
  • 3 large Jalapeno Pepper, seeded and minced
  • 2 cans Crushed Tomatoes, or one 28 oz can
  • 3 cups Water
  • 2 cans Kidney Beans, rinsed and drained
  • 2 cans Black Beans, rinsed and drained
  • 12 cup Steel Cut Oats
  • 2 tablespoons White Wine Vinegar
  • 3 cloves Garlic, minced
  • 2 tablespoons Chili Powder
  • 1 12 teaspoons Ground Cumin
  • 1 12 teaspoons Ground Coriander
  • 12 teaspoon Ground Cinnamon
