Tuna Noodle Casserole

Ingredients

  • 6 ounces curly egg noodles, (about 3 1/4 cups) **use GF as necessary (there's no GF egg noodle... so I'll see what works out)
  • 4 12 teaspoons Unsalted Butter
  • 1 medium Onion, finely chopped
  • 6 baby portabello mushrooms, trimmed and diced
  • 2 teaspoons Soy Sauce, **use GF as necessary
  • 14 cup Wine, (either white or red is fine)
  • 14 cup All-Purpose Flour, **use GF as necessary
  • 2 cups low-sodium chicken broth
  • 1 cup 2% Lowfat Milk
  • 2 teaspoons Fresh Lemon Juice
  • 14 teaspoon Salt
  • 1 can Canned Albacore Tuna in Water, 1 12 oz can + 5 oz can, drained (17 oz total)
  • 1 12 cups Panko Bread Crumbs, **use GF as necessary
  • 1 cup Grated Cheddar Cheese, cheddar-monterey jack cheese
  • 1 tablespoon Vegetable Oil
