- 4 1⁄2 teaspoons Unsalted Butter
- 1 medium Onion, finely chopped
- 6 baby portabello mushrooms, trimmed and diced
- 2 teaspoons Soy Sauce, **use GF as necessary
- 1⁄4 cup Wine, (either white or red is fine)
- 1⁄4 cup All-Purpose Flour, **use GF as necessary
- 2 cups low-sodium chicken broth
- 1 cup 2% Lowfat Milk
- 2 teaspoons Fresh Lemon Juice
- 1⁄4 teaspoon Salt
- 1 can Canned Albacore Tuna in Water, 1 12 oz can + 5 oz can, drained (17 oz total)
- 1 1⁄2 cups Panko Bread Crumbs, **use GF as necessary
- 1 cup Grated Cheddar Cheese, cheddar-monterey jack cheese
- 1 tablespoon Vegetable Oil
