Ingredients

  • 1 pound Shrimp, 21-30, peeled and deveined american (tail off)
  • 1 teaspoon Whole Coriander Seeds, (available in bulk at pcc)
  • 3 cloves Garlic, minced
  • 3 Green Onions, white and green parts, thinly sliced
  • Salt and Pepper, to taste
  • Lime, for squeezing
  • Hot Sauce, to taste
  • 12 Tortillas, hand made corn or good quality pre-made organic
  • 1 cup Cabbage, very finely sliced
  • sprig Fresh Cilantro
  • 12 cup Mayonnaise, organic
  • 12 cup Sour Cream, organic
  • 2 teaspoons Chipotle Chili Powder, or to taste
  • 2 tablespoons Fresh Cilantro, finely chopped
  • Salsa, of your choice
  • wedge Lime
  • Avocado, fresh, diced
  • Toasted Pumpkin Seeds
  • Radish, organic, thinly sliced marinated in lime juice and salt
  • Red Chile Pepper, finely diced organic, or red bell pepper
  • Pickled Jalapeno Peppers, sliced or chopped
  • Mango, fresh organic, finely chopped
