- 1⁄2 cup Dried Morel Mushrooms, (2 oz)
- 3 cups Hot Water
- 1⁄2 pound Fresh Mushrooms, of choice
- 5 tablespoons Butter
- 1⁄3 cup Shallot, finely chopped
- 3 cloves Garlic, finely chopped (1 heaping Tbsp)
- 8 tablespoons Flour, **use GF as necessary
- 4 cups Chicken Stock, good quality (or vegetable broth for vegetarian version) **use GF as necessary
- Salt and Pepper
- 1⁄2 cup Heavy Cream, 1/2 - 1
- splash Madeira
- 1⁄4 cup Fresh Parsley, finely chopped
- 1⁄4 cup Fresh Chives, snipped
