Cream Of Wild Mushroom Soup

Ingredients

  • 12 cup Dried Porcini Mushrooms, (1 oz)
  • 12 cup Dried Morel Mushrooms, (2 oz)
  • 3 cups Hot Water
  • 12 pound Fresh Mushrooms, of choice
  • 5 tablespoons Butter
  • 13 cup Shallot, finely chopped
  • 3 cloves Garlic, finely chopped (1 heaping Tbsp)
  • 8 tablespoons Flour, **use GF as necessary
  • 4 cups Chicken Stock, good quality (or vegetable broth for vegetarian version) **use GF as necessary
  • Salt and Pepper
  • 12 cup Heavy Cream, 1/2 - 1
  • splash Madeira
  • 14 cup Fresh Parsley, finely chopped
  • 14 cup Fresh Chives, snipped
