Ingredients

  • 6 Flour Tortillas, large size works best
  • 8 ounces Cream Cheese, substitute low-fat or Neuchatel if you like
  • 1 dozen Large Eggs
  • 2 cups ham, cooked bacon or sausage, chopped meats of all types can work in this dish - all meats should be pre-cooked.
  • 1 cup Cheese, shredded or crumbled - take your pick.
  • 1 cup Milk, you can use cream - low-fat - or skim milk as you prefer
  • 12 cup Grated Parmesan Cheese, we prefer grana padano or parmigiano reggiano for best flavor
  • 6 tablespoons Sweet Butter
  • 12 cup Flat Leaf Parsley, chopped as finely as you prefer
