1/2 lb pinquito beans, prepared (see recipe)1/3 cup olive oil
1/8 cup red wine vinegar
Juice of 1 1/2 fresh lemons
2 green onions, chopped
1/2 cup diced red onion
1/2 bell pepper (red, green, yellow or combination) diced into 1/4 " pieces
1 tablespoon minced fresh cilantro (you can substitute flat leaf Italian parsley if you don't like cilantro).
Salt, pepper and garlic salt to taste
