8 oz. Yellowfin tuna, timmed, sushi grade
2 Tbl. Mayonnaise
2 tsp. Chili paste (sambal)
1 tsp. Fresh lemon juice
to taste Salt and pepper

2 each Small red radishes
1/2 cup Kiware (diakon radish sprouts)
1/2 tsp. Rice wine vinegar
1 tsp. Peanut oil

4 sheets Nori
3/4 cup Water
1/4 cup Rice flour
4 cups Deep frying shortening (peanut oil works well)
