Apple Dollar Pancakes


These delicious apple-flavored flapjacks would serve well as either a quick weekend breakfast or a side dish for pork chops or roasted chicken. A bit of sour cream in the batter makes these pancakes a bit less sweet than most, which might make them a hit at your house. Try them with powdered sugar, sliced bananas or your favorite jam in place of the maple syrup. Apple Dollar Pancakes 3 large eggs, separated 3 tablespoons sour cream 1 apple, peeled, cored and chopped 3 tablespoons all-purpose flour 1 teaspoon baking powder 1/2 teaspoon ground cinnamon 3/4 cup pure maple syrup


Combine Egg Yolks, Sour Cream, Apple, Flour, Baking Powder And Cinnamon; Stir Well. Beat Egg Whites With An Electric Mixer Until Peaks Form; Fold Into Yolk Mixture. Drop Batter By 1/4 Cup Onto A Hot, Lightly Greased Griddle. Cook
