Broth:

2 carrots, peeled and sliced into 1-inch rounds
1 zucchini or summer squash, sliced and quartered

Meatballs:
1 egg or 2 egg whites, beaten
cup bread crumbs or crushed crackers
2 Tablespoons white onion, chopped fine
2 Tablespoons chopped green onions
1 large garlic clove, minced
1/4 teaspoon salt
1 teaspoon pepper
2 Tablespoons red bell pepper, diced fine
1 teaspoon cumin
1 Tablespoon fresh chopped mint
2 Tablespoons fresh chopped cilantro
1 can (14.75 oz.) or 2 cans (7.5 oz. each) traditional pack Alaska Salmon OR 2 cans or pouches (6 to 7.1 oz. each) skinless, boneless salmon
