Ingredients

  • 2 cups (about 8 ounces) Alaska Smoked Salmon
  • 1 cup quinoa
  • Pinch of salt
  • 1/2 cup sliced almonds, toasted
  • 1 tablespoon olive oil
  • 2 cups fresh asparagus, cut into -inch slices
  • 1 cup green onions, white and green parts, chopped

    Vinaigrette:
  • 3 tablespoons white wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon zest
  • Black pepper and salt to taste
  • 1 head Bibb lettuce, washed, patted dry and leaves separated
