Ingredients
2 cups (about 8 ounces) Alaska Smoked Salmon
1 cup quinoa
Pinch of salt
1/2 cup sliced almonds, toasted
1 tablespoon olive oil
2 cups fresh asparagus, cut into -inch slices
1 cup green onions, white and green parts, chopped
Vinaigrette:
3 tablespoons white wine vinegar
1 tablespoon Dijon mustard
1 tablespoon lemon zest
Black pepper and salt to taste
1 head Bibb lettuce, washed, patted dry and leaves separated
