Ingredients

2 cups or 6 oz., Shiitake mushrooms, fresh, sliced

1 cup or 4 oz., Onions, small dice

As needed Salt

3 qt. Fish or vegetable stock

1/2 tsp. Pepper

1 qt. + 3 1/2 cups or 3 lb. 12 oz., Couscous, plain

3 cans (14 3/4 oz. ea.) or 44 oz., Alaska Canned Salmon



Balsamic Mustard Dressing

2 cups Balsamic vinegar

1 cup Olive oil

1/2 cup or 1 oz., Basil, fresh, chopped

1/4 cup or 2 oz., Dijon-style mustard

1 tsp. Salt

1 tsp. Sugar

1/2 tsp. Pepper

24 Lettuce leaves
