10 oz dried rice stick noodles or rice vermicelli3 tablespoons fish sauce1 lb beef sirloin or flank steak, cut into very thin slices2 medium onions, thinly sliced4 cups bean sprouts, seed coats and tails removed, blanched until cooked2 to 3 chilies, deseeded and slicedGround white pepperSprigs of cilantro leaves , garnishSprigs of basil or mint, garnish2 lemons or limes, cut into sections, to serve1 portion Fish Sauce Dip

Broth

2 medium onions, peeled and bruised2 in fresh ginger root, peeled and bruised3 shallots10 cups beef stock1 lb beef shank or brisket2 star anise pods1 cinnamon stick1 teaspoon crushed peppercorns1 tablespoon salt
