¾ cup sugar
½ cup cake flour
¼ cup cornstarch

Cocoa genoise:
3 large eggs
3 large egg yolks
1 teaspoon (4gr) vanilla extract
pinch of salt
¾ cup sugar
½ cup cake flour
¼ cup cocoa powder

Coconut Bavarian cream:
1 tablespoon powdered gelatin
3 tablespoons water
4 egg yolks
1/4 cup sugar
1 cup coconut milk
1 cup heavy cream, cold

Mango mousse:
1.5 teaspoons powdered gelatin
1 tablespoon water
4 oz mango puree (goya store bought or make your own)
2 tablespoons sugar
1/2 cup  heavy cream, cold

Rum simple syrup:
1/2 cup water
1/4 cup sugar
2 tablespoons rum

Lemon glaze:
1.5 teaspoons powdered gelatin
1 tablespoon water
1/4 cup water
1/4 cup lemon juice
2 tablespoons sugar
