Coconut Caramel Cake

Ingredients

Coconut Cream Cake

8 ounces (1 cup) unsalted butter, softened13 1/2 ounces (3 cups) unbleached all-purpose flour1 tablespoon baking powder1/2 teaspoon kosher salt1 cup unsweetened coconut milk2 teaspoons vanilla extract2 cups granulated sugar2 large eggs, at room temperature1/2 cup sour cream, at room temperature6 large egg whites, at room temperature

Chocolate Ganache:

12 ounces semisweet or bittersweet chocolate, finely chopped3/4 cup heavy cream2 tablespoon unsalted butter2 tablespoon rum

Coconut-Caramel Topping:

½ cup (1 stick) unsalted butter1 cup brown sugar½ cup evaporated milk¼ teaspoon salt1 ½ cups sweetened coconut flakes (unsweetened will require more liquid)1 cups pecans, pieces, toasted lightly¾ cup finely diced dried cherries
