1 cup Coco Lopez or other coconut cream

Coconut Cream Cheese Frosting

16 ounces cream cheese (2 packages), room temperature

1 cup (2 sticks) butter, room temperature

½ teaspoon vanilla extract

1 pound confectioner’s sugar, sifted

2 cups fresh sliced or shredded coconut (lightly toasted in 250 degree oven is optional)
