Ingredients

Oil for frying

1 1/2 lb. pork cutlets, pounded

pinch salt, freshly ground black pepper

1/2 c. flour

1/2 c. panko (Japanese bread crumb) flakes

2 large eggs, beaten

1 TB soy sauce

1 tsp. brown sugar

oil for frying

Garnish: shredded cabbage

Tonkatsu Sauce:

1 c. catsup

½  c. Worchershire sauce 

1/2 c. sake 

2 TB ginger, grated

2 cloves garlic, grated

1/4 c. brown sugar 

1/4 c. mirin
