Pan-seared Mahi Mahi With Roasted Garlic Lime Sauce




3 tablespoons garlic and herb infused olive oil (recipe below)
4 - 6-ounce skinless Mahi Mahi fillets
1 teaspoon kosher salt
1 teaspoon freshly cracked black pepper

1 cup Roasted Garlic Lime Sauce (recipe below)

2 cups fresh tomato salsa (recipe below)
1 avocado, thinly sliced

2 cups cooked brown rice

Garlic and Herb Infused Olive Oil

1/2 cup good quality olive oil
1 twig of rosemary
1 sprig of thyme
6 cloves of garlic, smashed and roughly chopped
pinch of kosher salt and fresh cracked black pepper

1 large garlic bulb

1 teaspoon olive oil

3/4 cup sour cream

1/4 cup mayonnaise

1 teaspoon Worcestershire sauce

1 teaspoon grated lime rind

2 tablespoon fresh lime juice

1/2 teaspoon fresh thyme

Kosher salt and freshly ground pepper to taste

1/4 teaspoon hot sauce

Fresh Tomato Salsa

2 medium tomatoes, or 3 Roma, seeded and finely diced

1/3 cup chopped cilantro

1/4 cup finely chopped white onion

1 small fresh jalapeño or serrano chile, finely chopped, including seeds

1 tablespoon freshly squeezed lime juice

1 teaspoon kosher salt
