Quiche

Ingredients

1. Whisk together 1 cup of light cream or evaporated milk, 4 eggs, a little salt and pepper to taste and any other seasonings that you like depending on the vegetable you will use - for example, I like basil with broccoli, garlic with mushroom, etc. - if I am making plain cheese I add a little nutmeg and mace - 2. Use a pre-made pie crust or make your own with your favorite recipe and pre-bake for about 10 minutes 3. Put into bottom of each pie crust - 1 cup of shredded cheese (I use a combination of monterey jack, colby, sharp cheddar and swiss, one half cup of diced firm tofu and 1 and a half cup of the veggies you plan to use (broccoli and red pepper is a nice combo, love mushrooms plain or with anything else - usually add some onion no matter what. 4. Pour the cream/egg mixture over the veggies - and then I sprinkle with a litle parmesan cheese on top - and bake at 375F for about 45 minutes until the middle doesn't giggle. Let stand until set and firm enough to cut. Or chill and serve cold (Our family prefers it hot with the melty-cheese oozing out)
