Ingredients
4 skinless chicken breasts (boneless will work, but tend to get dry) 2 C broccoli florets 2 C carrots, scraped, cut into 2' pieces 1 C zucchini, sliced 1 C red onion, thinly sliced 1/2 t paprika 1/2 t basil 1/2 t white pepper 1/2 t salt 1 T butter (or low fat mayonnaise) 1/2 t soy sauce 1/2 t teriyaki (if you don't keep this, use 1 t soy sauce) 1 T honey 1 t dry mustard Juice of one lime Wash and trim chicken breasts, sprinkle with paprika, basil, salt, and pepper. Combine next 5 , spread mixture on chicken. Preheat oven to 375F. Spray a large (2 3 quart) oval baking dish with Pam. Place carrots on the bottom of the pan, add broccoli, then zucchini. Place chicken bone side down on top of vegetables. Cover with onion slices. Bake 45 minutes or until chicken is done. If you're in a real hurry, you can buy the vegetables already cut up (or frozen) and have dinner ready in a flash!Description
