Apricot Oatmeal Cake


(Robin Hood Baking Festival 1998)Cake:1 1/4 cups boiling water1 cup oats1 1/4 cups whole wheat flour1 tsp baking powder1 tsp baking soda1/2 tsp salt1/2 tsp nutmeg1/2 cup margarine1 1/2 cups packed brown sugar2 eggs3/4 cup finely chopped dried apricotsTopping:3 Tbsp Margarine1/2 cup packed brown sugar3 Tbps light cream1 cup flaked coconut1/2 cup chopped nutsCake: Pour boiling water over oats. Stir and set aside. Combine next five dry . Cream margarine, brown sugar and eggs together until light. Stir in oats, flour mixture and apricots. Blend thoroughly. Spread batter into greased 9' pan. Bake at 350F for 35-40 minutes.Topping: Prepare topping while cake is baking. Melt margarine in small saucpan. Stir in remaining ingreadients. Spread evenly on warm cake. Broil 6' below element for 3-5 muntues or until golden. Cool
