- 1/2 vanilla bean, chopped
- 1 1/3 cups (packed) golden brown sugar
- 6 tablespoons all purpose flour
- 1/2 teaspoon salt
- 9 pounds Bosc pears, peeled, halved, cored, each half cut into 4 slices
- 4 tablespoons heavy whipping cream
- Milk
- Raw sugar
