Apricot Almond Linzertorte

Ingredients

For pastry

  • 2 cups whole almonds with skins (10 oz), toasted (see Tips) and cooled completely
  • 3/4 cup sugar
  • 3/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 2 large egg yolks
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon pure almond extract
  • 2 teaspoons grated lemon zest
  • 1 1/2 sticks cold unsalted butter, cut into 1/2-inch pieces

For filling

  • 1 cup water
  • 2/3 cup sugar
  • 1/3 cup brandy
  • 8 oz dried Pacific apricots
  • Confectioners sugar for dusting
