  • 1/3 cup molasses (not robust or blackstrap)
  • 2 tablespoons water
  • 2 teaspoons fresh lemon juice
  • 1/2 teaspoon grated nutmeg
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 5 Gala or Granny Smith apples (2 to 21/2 lb), peeled, cored, and cut into 1/2-inch wedges
  • 1 tablespoon all-purpose flour
  • 1/2 cup sugar
  • 2 tablespoons unsalted butter, cut into bits

For biscuit top

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 3 teaspoons sugar, divided
  • 1/2 teaspoon salt
  • 3/4 stick cold unsalted butter, cut into 1/2-inch pieces
  • 1 cup heavy cream plus additional for brushing
