500g coarse rock salt
250g sugar
2 limes (zest and juice)
3 star anise
12 coriander seeds

250ml milk
1 tbsp wasabi powder
½ tsp dashi powder
1 drop green food colouring
2g agar agar

Pickled Avocado
2 avocados
50ml rice wine vinegar
25g sugar
75ml water

Tempura Avocado
2 avocados
100g tempura flour
70ml soda water
Pinch of salt

Garnishes
Pickled daikon
Baby coriander
Baby shiso leaves
Baby radish (finely sliced)
Freeze dried soy sauce
