For Sponge Cake Ring: 1 cup less 2 tablespoons  unsifted cake flour 1 teaspoon  baking soda 2   large eggs 2   large egg whites 1 cup  sugar 2 teaspoons  lemon juice 2 teaspoons  vanilla extract 1/3 cup  nonfat milk, heated to about 150°F For Fruit Filling & Glaze: 1/2 cup  sugar 1 cup  water 1/4 cup  apricot brandy or orange juice 2 teaspoons  unsalted butter 4 cups  pitted and sliced fresh nectarines (about 1 1/2 pounds) 3 cups  seedless green grapes (about 1 pound) 2 cups  sweet cherries, pitted and halved (about 1 pound)
