Sour Cream and Soy Coffee Cake

Ingredients

Sour Cream and Soy Coffee Cake
YEILD: 9 portions
Blend together until crumbly, and then set aside for later use:
cupBrown sugar
2 Tbsp.Bread flour
2 tsp.Cinnamon
cupRoasted soy nuts (Chopped)
Cream together:
cupMargarine
1 cupGranulated sugar
Blend in gradually:
cupSoft tofu
4Eggs
Sift together and blend in:
1 cupBread flour
cupCake flour
cupSoy flour
1 Tbsp.Baking powder
1 Tbsp.Baking soda
? tsp.Salt
1 tsp.Vanilla
Blend in, scrape down bowl and slightly more:
1. cupSour cream or Soy Cream
1. Spread 1/3 of the batter evenly in a 9 x 9 in. greased pan.
2.Sprinkle of the crumb topping evenly over the batter.
3.Gently spoon the remaining 2/3 of the batter over the crumb layer.
4.Top with the remaining crumb topping
Bake in a 350 oven for 35-40 minutes.
