Apricot-almond Sandwich Cookies


For Cookies: 3/4 cup  whole almonds 1 1/4 cups  white whole-wheat flour (see Note) 1/2 cup  unsalted butter, softened 1/3 cup  sugar 1/4 teaspoon  salt For Filling & glaze: 1/3 cup  apricot preserves 1/2 cup  bittersweet chocolate chips or 3 1/4 ounces bittersweet chocolate, chopped 1 tablespoon  unsalted butter 1 tablespoon  low-fat milk 1 1/2 teaspoons  light corn syrup Note: White whole-wheat flour, made from a special variety of white wheat, is light in color and flavor but has the same nutritional properties as regular whole-wheat flour.
