Ingredients

5 tablespoons unsalted butter
1 oz. freshly grated parmesan cheese
1 medium leek, white and light green parts only, sliced thin
3/4 cup chopped spinach, blanched and drained
1 1/2 teasoons salt
1/4 teaspoon nutmeg
3 tablespoons flour
1 cup milk, scalded
2 1/2 oz. gruyere cheese, grated
Freshly ground pepper to taste
4 large egg yolks
8 egg whites, at room temperature
