For Sauce: 1/2 cup packed brown sugar 1 tablespoon cornstarch 1/4 cup water 1/3 cup half and half or light cream 2 tablespoons light corn syrup 1 tablespoon margarine or butter 1/2 teaspoon vanilla For Pie: 1/2 cup sugar 3 tablespoons all-purpose flour 1/4 teaspoon ground cinnamon 1/8 teaspoon ground nutmeg 6 cups thinly sliced, peeled cooking apples (6 medium) 1/2 cup raisins 1/2 cup Caramel Sauce (above) Pastry for Double-Crust Pie 1 egg yolk 1/4 teaspoon water 3 or 4 drops red food coloring 3 or 4 drops green food coloring
