1/2 cup wild rice 2 cups water 1/2 cup brown or long-grain white rice   1 buttercup squash or 2 acorn squash   1 tablespoon cooking oil 1 small red, yellow, or green sweet pepper, chopped 1/2 cup chopped tomato (1 medium) 1/4 cup sliced green onion 1 clove garlic, minced 1 tablespoon minced fresh parsley 1 tablespoon minced fresh oregano or 1 teaspoon dried oregano, crushed 1/2 teaspoon salt 1/4 teaspoon pepper 1/2 cup shredded cheddar or monterey jack cheese (2 ounces)
