Ingredients

  • 1 tbsp oil
  • 1 medium eggplant, halved lengthways & sliced
  • 1 zucchini, sliced
  • 1 red capsicum, cut in 2cm dice
  • 1 cup couscous
  • 1 tsp vegetable stock powder
  • 1 cup boiling water
  • 400g can Edgell Chick Peas, drained
  • 1 cup natural yoghurt
  • 1 tbsp chopped fresh mint
  • 1 tsp honey
  • 1 tsp grated orange rind
  • 1 tbsp orange juice
