Seafood Bouillabaisse

Ingredients

  • 1 tsp saffron threads or powder
  • 1 tbs olive oil
  • 2 leeks, trimmed, halved, washed and thinly sliced
  • 3 garlic cloves, crushed
  • 800g can Woolworths Select Diced Italian Tomatoes
  • 1 large lemon, finely grated rind and juiced
  • 3 cups fish stock
  • 1 cup white wine
  • 750g thick white fish fillets, cut into pieces
  • 20 mussels, cleaned and de-bearded
  • 16 green prawns, peeled and de-veined
  • 1/2 cup continental parsley leaves, roughly chopped
  • 1/2 French bread stick, thinly sliced
  • 1 cup grated Gruyere cheese
