  • 1/4 cup finely chopped fresh mint

  • 2 lemons, halved

  • 190g couscous
  • 250ml boiling water
  • 80g baby spinach leaves
  • 1/2 cup loosely packed fresh coriander leaves
  • 1/2 x 250g punnet cherry tomatoes, halved
