1 1/2 pound of cheese, shredded–preferably cheddar, colby jack and/or mozzarella
8 strips bacon, cut into bite-sized pieces
8 ounces button mushrooms, sliced
3 tablespoons butter
3 tablespoons flour
2 1/2 cups milk, whole or reduced-fat
1 teaspoon garlic powder
1 teaspoon cayenne pepper
salt & pepper to taste
2 teaspoons white truffle oil (optional)
