Ingredients

  • Pinch of salt
  • 2 dashes of ground cinnamon
  • 2 teaspoons grated lemon zest, organic if available
  • 1 tablespoon Cognac
  • 3 to 4 tablespoons granulated sugar
  • 4 tablespoons unsalted butter, melted
  • 1 pound flavorful cooking apples, such as Granny Smith
  • 6 or 7 large cabbage leaves
  • 1 tablespoon light brown sugar
  • Confectioners' sugar
