Asparagus and Cilantro Soup

Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, coarsely chopped
  • 3 stalks celery, coarsely chopped
  • 3 cloves garlic, chopped
  • 1 small russet potato, peeled and coarsely chopped
  • 1 tablespoon chopped fresh basil
  • 2 teaspoons chopped fresh oregano
  • 1 teaspoon ground cumin
  • 6 cups vegetable stock or water
  • 2 pounds asparagus, trimmed, tips reserved and stalks cut crosswise into 1-inch pieces
  • 1 tablespoon tamari
  • 2 teaspoons sea salt
  • 1/8 teaspoon freshly ground white pepper
  • 1/2 cup finely chopped fresh cilantro
